Fix 1: Update Stuck on Installing
That means MacOS Software Update is Downloaded on your Mac but won’t complete the installation after you clicked on the Update Now button in the Software Update option. That means your mac update stuck on apple logo or Mac/MacBook stuck on apple logo with the loading bar.

In my opinion, you have to wait for more time. Becuase installation will take up to 45 minutes depending on your Mac models. I mean, process and Speed performance. But if you are waiting for a long time, Like 2 hours then Restart your Mac and check again.
Press and Hold on the Power button Until your Screen goes black. and you will listen to the startup sound from Mac.
Fix 2: Restart your Mac

now close the Disk utility window and You will see the macOS Utilities window, Go with the Reinstall MacOS option.

Patience is the name of the game. I spent most of my weekend trying to resolve a seemingly stuck Catalina installation. Finally I just gave up and left it on the Apple logo screen with ‘Estimating time remaining..’ and a suspiciously slow progress bar. 2 days later and I came home to find the installation finished successfully. There seems to be an issue with time machine snapshots even if time machine is not enabled. I’m not even going to delve into this because my assumption is that Apple will resolve it by the next Beta release and we’ll forget it ever existed.
